During our culinary departures, we host chefs dedicated to culinary excellence, mirroring the caliber of our Relais & Châteaux chefs on board Origin, Theory & Evolve.
These guest chefs craft bespoke four-course dinner menus exclusively for guests aboard our yacht. Additionally, they showcase their unique interpretations of Latin American cuisine.
A Journey of Ecuadorian Flavors
Join us October 18–25, 2026, in collaboration with Chef Heberto Eljach, Cartagena-born chef of Lebanese heritage who has served for more than a decade as Executive Chef of the prestigious Casa San Agustin and Casa Pestagua (Relais & Châteaux) properties in Cartagena. He is the creative force behind the restaurant concepts Alma, Animare, and Acasi working closing with local fishermen, and regional farmers. Through his work, Heberto has become a distinguished ambassador of Colombian cuisine, celebrating the country’s culinary heritage on the world state. In 2025, Casa Pestagua was awarded two Michelin Keys.
He is joined by Roosevelt Muriel, Director of Operations and Food & Beverage for the hotels. Guests on board are treated to an immersive dining experience featuring an exclusive menu and curated dining experiences that celebrate Latin American flavors in the Galapagos.
Local & International Talent Featuring Local Flavors and Island Delicacies
The aim is to spotlight Ecuadorian gastronomy through a diverse array of culinary talent. Since 2018, Ecoventura has extended invitations to chefs from Relais & Châteaux properties in Latin America and continues to welcome both local and international talent aboard on an ongoing basis.
Guests indulge in the freshest locally sourced ingredients, skillfully transformed into exquisite dishes inspired by the rich culinary traditions of the region. From succulent seafood to exotic fruits and vegetables unique to the islands, each meal is a celebration of Galapagos cuisine.
